BREAD PUDDING

You will need a large buttered baking pan approximately 12" x 13" The prep time includes soaking the bread

Ingredients
  • 2 loaves of sliced white bread a few days old (use about 25-30 slices, crusts removed)
  • 300ml water
  • 300ml full fat milk (or use 600ml of semi skimmed milk instead of milk and water)
  • 600g mixed dried vine fruits
  • 100g mixed peel
  • 1 eating apple, grated (don't bother to peel)
  • 90g soft dark brown sugar
  • 100g self raising flour
  • 4 eggs
  • 4 tablespoons marmalade
  • 1 tablespoon cinnamon
  • 1 rounded tablespoon mixed spice
  • 250g unsalted butter, melted
  • Granulated sugar
Instructions
  1. Preheat Oven to 140 c (fan)
  2. Tear up the stale bread into pieces and put in a very large bowl. Pour over the milk or milk and water and leave to stand for half an hour.
  3. Mix with a fork until the bread is soggy and lump free then add the fruit, peel, apple, sugar, flour, eggs and spices. Mix with a wooden spoon until well combined then add half the melted butter. Stir again.
  4. Tip the mixture into the buttered pan then pour over the remaining butter. Don't be alarmed, it does look rather strange.
  5. Cook on a low temperature for 1 and a half hours then turn up the heat to 180c for a further 30 minutes.
  6. Remove from the oven, sprinkle generously with granulated sugar and leave to cool (do not wait until the pudding is cool to put the sugar on, it will not have the same effect). Cut into squares and enjoy.
