STICKY BANANA BROWNIES

- 50g Good Quality Dark Chocolate or Chips
- 50g Unsweetened Cocoa Powder
- 250g Unsalted Butter
- 400g Caster Sugar
- 4 Eggs, whisked
- 100g Self Raising Flour
- 2 Very Ripe Bananas, mashed
- 2 Bananas, sliced thinly lengthways
- 2 Tablespoons Maple Syrup
- 1 Tablespoon Butter
- Line a 8 x 12in baking tray with baking paper.
- Preheat the oven to 170c (fan)
- Put the chocolate, cocoa, butter and sugar in a saucepan and heat gently until melted and the sugar has dissolved.
- Take off the heat, add the eggs and stir until combined, Fold in the flour then mix in the mashed bananas. Pour into the prepared pan.
- Lay the sliced bananas on the top.
- Put in the oven and cook for approx 35-40 mins, until firm.
- Towards the end of cooking, put the maple syrup and remaining butter in a small pan and heat gently until combined.
- When the brownies are cooked, remove from the oven and gently brush over the warm maple syrup mixture.
- Leave to cool in the pan before cutting.
