STICKY BANANA BROWNIES

Ingredients
  • 50g Good Quality Dark Chocolate or Chips
  • 50g Unsweetened Cocoa Powder
  • 250g Unsalted Butter
  • 400g Caster Sugar
  • 4 Eggs, whisked
  • 100g Self Raising Flour
  • 2 Very Ripe Bananas, mashed
  • 2 Bananas, sliced thinly lengthways
  • 2 Tablespoons Maple Syrup
  • 1 Tablespoon Butter
Instructions
  1. Line a 8 x 12in baking tray with baking paper.
  2. Preheat the oven to 170c (fan)
  3. Put the chocolate, cocoa, butter and sugar in a saucepan and heat gently until melted and the sugar has dissolved.
  4. Take off the heat, add the eggs and stir until combined, Fold in the flour then mix in the mashed bananas. Pour into the prepared pan.
  5. Lay the sliced bananas on the top.
  6. Put in the oven and cook for approx 35-40 mins, until firm.
  7. Towards the end of cooking, put the maple syrup and remaining butter in a small pan and heat gently until combined.
  8. When the brownies are cooked, remove from the oven and gently brush over the warm maple syrup mixture.
  9. Leave to cool in the pan before cutting.
