THE BEST SIMPLE ROAST CHICKEN

I use fresh herbs that take my fancy at the time of cooking. Rosemary, sage, oregano, thyme, fennel leaves, sometimes a bay leaf.

  • 1 Good Quality Chicken, free range minimum, preferably organic.
  • 1 Lemon
  • Handful of Fresh Parsley Stalks
  • 4-5 Garlic cloves
  • 2 tsp sea salt
  • 1 tsp ground black peppercorns
  • Oilve oil
Instructions
  1. Preheat the oven to 195c 380f.
  2. Take the chicken out of the fridge half an hour before cooking.
  3. Crush the salt and pepper in a pestle and mortar.
  4. Halve the lemon.
  5. I find it a good idea to get everything you need together beforehand, this saves having to keep washing you hands after touching the chicken.
  6. Don't feel the need to wash it, this just spreads germs.
  7. Place in a roasting tin.
  8. Take off any string.
  9. Put half the lemon, the parsley (plus any other herbs you are using), garlic and a teaspoon of the salt and pepper in the cavity.
  10. Squeeze the juice of the other half the lemon over the chicken.
  11. Drizzle with oilve oil.
  12. Sprinkle over the remaining seasoning.
  13. Do not cover.
  14. Roast for 55 minutes.
  15. Using a food thermometer check the temperature through the thickest part of the thigh, it should be at least 74c (165f).
  16. Leave to rest for at least 10 minutes before carving.
