You will need an 8" tart tin. Make the pastry a little while before to give it time to rest for half an hour in the fridge.

  • Pastry
  • 120g Flour
  • 60g Unsalted Butter
  • 1 Egg
  • ....
  • Filling
  • 120g Ham, chopped
  • 120g Stilton, crumbled
  • 300ml Double Cream
  • 1 Egg
  • 3 Egg Yolks
  1. Preheat oven to 200c (400F)
  2. Make the pastry and after resting in the fridge line the tart tin.
  3. Put the tin onto a baking tray.
  4. Prick the base with a fork.
  5. Whisk together the cream and eggs.
  6. Scatter the ham and Stilton over the pastry.
  7. Pour on the cream mixture.
  8. Cook in the oven for 20 minutes then reduce the heat to 180c (350F) and cook for a further 10 minutes until starting to brown and beautifully puffed up.
  9. The 'custard' will deflate a bit once it is out of the oven.
  10. You can serve this straight from the tin but if you are feeling confident take it out of its tin after it has cooled a little.
