This is for the size of rib I had which cooked rare/medium rare. Cook for half hour at the high heat then 15mins for every 500gm for medium rare.

Ingredients
  • 225k rib of beef (two ribs)
Instructions
  1. Make sure the joint is at room temperature.
  2. Preheat oven to 200c (fan)
  3. Place joint standing up in a roasting tray.
  4. Put in the hot oven uncovered and cook for 30 minutes on a high heat.
  5. Lower temperature to 160c and cook for a further hour.
  6. Take out, cover with foil and leave to rest for at least 20 minutes.
