Try to ensure you have cold hands when making these. Don't overwork when handling the dough as it will become sticky.

  • 110gm unsalted butter
  • 70gm icing sugar
  • A few drops of almond extract
  • 120gm ground almonds
  • 80gm flour
  • Icing sugar for dusting
  1. Line two baking sheets with baking paper
  2. Preheat oven to 165c (fan)
  3. Beat the sugar, butter and almond extract together until light and fluffy.
  4. Add the almonds and flour and mix until combined. Don't overmix.
  5. The dough will be quite stiff.
  6. Take a lump about the size of a walnut, roll into a sausage shape and curl gently into a crescent.
  7. Lay on the baking sheet and repeat until all the dough has been used.
  8. It should make about 20.
  9. Place in the oven for approx. 15 minutes until firm.
  10. The biscuits should be pale in colour, just starting to brown slightly, no more.
  11. Whilst still on the baking tray dredge with plenty of icing sugar so they are white.
  12. Lift biscuits onto a cooling tray and leave until cold.
  13. Store in an airtight tin (will keep for a week).
