A very quick, dense, moist and always delicious chocolate cake. Perfect for beginners and a winner for children's parties.

  • 1¾ cups flour
  • 2 cups caster sugar
  • ¾ cup unsweetened cocoa
  • 1½ teaspoons baking powder
  • 1½ teaspoons bicarbonate of soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 1½ teaspoons vanilla extract
  • 1 cup of boiling water
  1. Preheat oven to 170c (fan)
  2. Base line two 8" sandwich tins
  3. Mix the dry ingredients together in a mixer.
  4. Add the eggs, vanilla, oil and milk.
  5. Mix until incorporated.
  6. Add the boiling water, stir in by hand or very low on the mixer so it doesn't splash.
  7. It will be very runny, don't panic!
  8. Pour into tins.
  9. Cook for approx 35 minutes until risen and a skewer comes out clean.
  10. I leave mine to cool in the tins.
  11. Fill and decorate as required.
