An easy peasy soup, more spice can be added if required but I find this is just right for most people's tastes.

Serves: 6
  • 1 large onion, chopped
  • 3 large parsnips chopped small
  • 1 teaspoon curry powder
  • ½ teaspoon ground cumin
  • 2 pints ham stock
  • salt and pepper
  • butter for frying
  • single cream to finish
  1. Fry the onion gently in a knob of butter until translucent.
  2. Add the parsnips and cook for about 5 minutes.
  3. Mix in spices.
  4. Add stock, mix well and simmer for about half an hour until parsnips are cooked.
  5. Puree in processor or blender. (I find it easier and less messy to strain the soup and just puree the vegetables, the return to the pan and stir together with the remaining stock).
  6. Season
  7. Heat until serving temperature, do not boil.
  8. Serve with single cream to garnish.
