These can be made with most dried fruit. Apricot works really well too. Delicious slightly warmed with good vanilla ice cream. They freeze really well.

  • 80gm soft dried prunes
  • 3 tablespoons brandy
  • 250 gm unsalted butter
  • 50gm cocoa
  • 50gm plain chocolate
  • 500gm caster sugar
  • 4 eggs beaten
  • 100gm self raising flour
  1. Line a suitable tin about 8x12 ins
  2. Preheat oven to 170c (fan)
  3. Roughly chop the prunes (I always use scissors to snip the fruit as I find it easier)
  4. Put them in a small bowl with the brandy and leave to soak while you prepare the rest of the ingredients.
  5. Put the butter, cocoa, chocolate and sugar in a saucepan and cook on a low heat until it has all melted.
  6. Stir frequently to stop the sugar sticking.
  7. Take off the heat and stir in the beaten eggs.
  8. Stir in the flour.
  9. Add the fruit and brandy and mix well.
  10. Pour in the prepared tin and cook for 25 mins.
  11. Leave to cool in the tin.
